Galette with berries

DOUGH
Flour 200 gr
Butter 70 gr
Powdered sugar 40 gr
Cold water 50 gr
Yolk of one egg

FILLING
Any berries 400 gr
Powdered sugar 20 gr
Corn starch 10 gr

Protein for greasing galettes

Mix flour with powdered sugar. Grate cold butter. Grind everything into crumbs. Add the rest of the ingredients and knead a fairly stiff dough. Leave in the refrigerator for 10 minutes.

Prepare berries. Mix starch with powder.

Take out the dough, roll it into a circle, 5-7 mm thick. Roll out immediately on the parchment on which you will bake. Pour a mixture of starch and powder into the center of the circle, spread it over the dough, leaving 5-6 cm from the edge. Place the berries on top. Pinch the edges of the galette and brush with egg white. Put the galette with the parchment on a baking sheet and bake in the oven at a temperature of 180° for 30 minutes until ready.
